My eating habits have been sort of weird recently because I'll be elsewhere some mornings and only get home in the early afternoon.
Pre-brunch, I had coffeecoffee and a couple cherries (which were surprisingly good despite being out of season) at my friend's house. When I left I picked up some groceries to make a decent, quick meal to fill me up after not eating until 1:30.
Enter:
I don't eat bread often anymore but I've always liked this dense Pumpernickel bread. Really hearty.
Untoasted, topped with half an avocado, garlic powder, pepper, and kala namak (black salt) to make it almost like an open-face egg salady sandwich. I took a chance on more cherries and these were delicious as well.
Just what I needed. Simple and, in one meal, already more interesting than all of last week's repeat lunches.


Time to start keeping food at the 'elsewhere' place. Or is it 'too soon'?

ReplyDeleteI've had that pumpernickel before, and you're right - it is dense and filling! Well done on the open face avocado sandwich.
Definitely filling and full of fiber, haha. It kind of HAS to be open faced or it'd be way too much.
DeleteI can't even describe to you how jealous I am of this perfect meal. Pumpernickel is by far my favorite bread and topping it with avocado makes it that much better. That's great that you found good cherries, I'm jealous! I miss cherries and watermelon from the summer. Mmmm. Can't wait to run those two things through my juicer this summer.

DeleteI can't stop eating avocadoes of late; thanks for suggesting the additon of black salt! I love pumpernickel bread, but have never mustered up the nerve to bring that brick loaf home. Maybe one day soon...

DeletePumpernickel is the bee's knees. I once crumbled it and baked it with a little sugar into dense little delicious nuggets, and layered it with stewed apples. Thank you for the reminder!

DeleteToast with avocado is definitely my cup of tea! I don't think I've ever tried that pumpernickel, although I see it all the time. Must put it in the list. :)

ReplyDeleteHmmm well I make collard wraps a lot (using a collard leaf instead of bread slices or a flour wrap) and they're pretty good at standing in for sandwiches. If you feel like you need the carbs, eat a different grain like quinoa or rice on the side. most sandwiches are about the filling anyway, so sometimes I'll just imagine a sandwich and make the inside stuff and eat it alone! You'll find what works. Sometimes gluten-free crackers will help a craving too.
